How To Make The Best Tasting Vanilla Cake

Who wants to eat some cake? I see you throwing your hands up, Aunty-gimme-cake style. There’s no shame in that. Ah yes. Cake. I. Love. Cake. Moist, fluffy, flavourful and dee-licious.

A slice of cake is the perfect way to celebrate all occasions. I’m not referring to the norm; birthdays, weddings, anniversaries and the likes. By occasions, I mean I woke up—a slice of cake. I made it through the day—a slice of cake. I took off my heels—a slice of cake, and I need to indulge— a slice of cake.

Cake has a way of making you happy. Just the thought of it alone will leave you craving for a slice. The recipe to a happy life if you ask me, is a slice of cake a day. You know the drill; any excuse for some cake. 

If you love cake as much as I do, this simple Vanilla cake recipe will be the best you’ve ever had. Take a shot at it, and thank me later. Satisfaction is guaranteed, not just from the taste but the simplicity in putting it together. This recipe has an amazing flavour, it is incredibly moist, has a soft cloud-like crumb, and it is such a beauty to behold. Here’s how to make it. 

Ingredients

368g All Purpose Flour
368g Granulated Sugar
227g Unsalted Butter
113g Whole Milk to be mixed with the oil
170g Whole Milk to be mixed with the eggs
85g Canola Oil
14g Baking Powder
3 Large Eggs
1 Tablespoon Vanilla Extract
½ Teaspoon Salt
¼ Teaspoon Baking Soda

Step 1

Preheat the oven to medium heat and prepare cake pans. Add the oil to 113g of milk and set aside. In another measuring jug/ cup, add the vanilla extract and room temperature eggs. Whisk gently to combine. 

Step 2

Sift the dry ingredients; flour, sugar baking powder, baking soda 

and salt into the bowl of your mixer. Turn the mixer on to the slowest speed and slowly add chunks of softened butter until it’s all added. Mix until it begins to look like coarse sand. 

Step 3

Pour in the milk-oil mixture all at once and put the mixer on medium speed for 2 minutes. Scrape the bowl after 2 minutes. This is an important step. If you skip it, you will have hard lumps of flour and unmixed ingredients in your batter. If you do it later, they will not mix in fully.

Step 4

Add in the milk-egg mixture slowly while the mixer is on low speed. Stop to scrape the bowl one more time halfway through. Mix until combined. The batter should be thick and not runny. Place batter in greased pans and fill about ¾ of the way. Bake for 30 minutes and check your cake to be sure it passes the done test; insert a toothpick to see if it comes out clean. Bake for 2-3 minutes more if it doesn’t.
